These are my cupcakes. I went for Lemon and Blueberry, I figure they are at least a little healthy! Tried cream cheese frosting but it was a bit of a disaster so I went with what I knew and made lemon butter cream, yum! The recipe is from this book, I altered it a little cos I couldn’t find any polenta.
